Welcome

Welcome to my blog. We will see how long this whole blogging thing lasts but I wanted to at least try it. As I thought about what I should blog about nothing seemed to come to mind, I don't feel as though I have any real hobbies or special talents to write about. I decided to write about something that I believe in, which is my Epicure business. The big thing that drew me to becoming an Epicure Selections consultant was the ability to create easy meals that were also healthy for my family. If you haven't heard of Epicure or its products let me tell you a bit about it. If you know all about it already please just bear with me for a bit. Epicure was started by a lady name Sylvie Rochette who wanted to create easy, healthy, and flavorful meals for her family. Her business started out with a few spice blends that she sold out of the back of her station wagon. Her business soon became so popular that it turned into what Epicure Selections is today. Sylvie now travels the world in search of ingredients to create her next hit spice blend. Epicure Selections is 100% Canadian owned and women run. Epicure boasts bold flavors that contain little to no salt, which is one of the things that I love about the company. I do not miss the salt at all in my cooking. What I love about being an Epicure Consultant is this: I get to share my passion for this line of products with others. I get to do this by finding people to host parties, so here's my plug for the night, if you are interested in hosting a party, there are great hostess benefits that change every month which includes free product. It's so easy to host a party, all I need you to do is invite everybody you know, but some carrots and chips, and supply any drinks you may want, and I take care of the rest! One of Epicure's most popular products is their line of dip mixes. I get asked a lot is: I do not make dips a lot, so why would I buy a dip mix? Well the answer is simple. Being able to make a dip with them is just a bonus. These dip mixes are great for every day cooking, and that is what I hope to do with this blog, to show how these flavors can be used to spice up everything you cook! So on with what I wanted to write about today. My recipe of the day today is Chicken Quesadillas (this recipe feeds Wes, Josiah, and myself so feel free to adjust to your family size). 3 boneless skinless chicken breasts cubed and cooked - I like to add a bit of Epicure's Lousianna Hot & Spicy Dip mix for flavor 4 Tortilla Shells ~4 tbsp of plain cream cheese - it's really all about how much you like on yours Epicure's Herb & Garlic Dip Mix Cheese - this is also up to you how much you like, we use a combination of cheddar and mozza Veggies - we tend to use peppers and spinach (we chop it up really fine so Josiah does not notice it, we also throw in some peas and corn into his) Epicure Selections Salsa (prepared) Sour Cream Spread a layer of cream cheese on half of the tortilla shell. Sprinkle with Epicure's Herb & Garlic Seasoning (to taste). Add a layer of cheese. Add your chicken. Add the veggies. Finally add another layer of shredded cheese. I put a layer on both sides so that it helps hold the tortilla together. Bake at 350 until cheese is melted and tortilla shells are a little crispy around the edges. Serve with sour cream and your favorite Epicure Selections Salsa.
